High tradition sardins made in Provence entirely 
prepared by hand as they were before, our 
sardins are placed on grates and baked in the oven 
to have them lighter and more digestible. 
They are guaranteed free of frying fat.  

 

Shads in first rate virgin olive oil :
fished in the Mediterranean sea, firmer than sardins, with a smooth mellow flesh.
Baked on grates in the oven.

The Pescadou's sardins : one of my grand-father's recipes.
He used to choose a few sardins, placed them in a frying-pan 
with oil, garlic, lemon, parsley and let them cook 
in their juice.

Filets of Mediterranean red tuna in first rate virgin olive oil : they are taken from the stomach of the red tuna.

Only a few tins of filets are made with one tuna.
Entirely prepared by hand.

brine, or first rate virgin olive oil, or in tomato sauce
with Provence herbs : small red tuna fished in
the Mediterranean sea, of very fine quality, it is prepared by hand .
